Daddy's Birthday Butterscotch Pie

This is a recipe of love. Mom set everything else aside on the days she made this pie for Daddy and us. It was Daddy's favorite. Mom made it several times a year, sometimes for Christmas, often for Easter, and always for Daddy's Birthday on May 11th and Father's Day in June.

One 9" Pie

Ingredients:

Directions:

Make Filling:

In saucepan melt margarine. Add brown sugar. Allow to brown slightly while stirring.

Remove from heat. Gradually stir in water.

In a bowl, beat egg yolks. Stir in flour, salt and small amount of milk.

Stir until smooth; add remaining milk.

Slowly mixture in bowl to hot sugar mixture in saucepan.

Return to low heat. Cook until thick, stirring constantly.

Add vanilla. Cool

Pour into baked pie shell.

Make Meringue:

Beat egg whites until stiff. gradually beat in white sugar.

Pile meringue on pie filling

Bake pie at 300°F degrees for 30 minutes.
