Cheesy Hominy Scramble

Another of Steve's never-ending variations on a skillet breakfast.

4 Servings



Put the partly drained hominy in a skillet. Cook off remaining liquid.

Reduce heat to low

Add eggs, and scramble with the hominy.

When eggs are set, lay slices of cheese on top.

Swirl the melting cheese through the pan.

Serve at once.
