Cajun-style dish. Etouffee means "to smother". Serve with Saffron Rice and Buttered Baby Carrots.
Grill the chicken pieces.
While they are cooking, make the sauce:
Saute pepper, onion, and garlic in oil until just soft.
Add the remaining ingredients and simmer for 25 minutes.
Put the chicken pieces on a platter, and pour the sauce over it.
