Chicken Salad

Equally good in a sandwich, or as part of a cold plate.  

Serves 2-4



Put chicken and large chunks of celery in a saucepan. Add water. Bring to boil, then turn down to simmer until the meat is cooked.

Remove meat (save broth in refrigerator to cook noodles or rice later in the week). Dice the meat and put in a bowl.

Add celery, salt and pepper to the chicken. Mix. Add mayonnaise to taste. Mix well
