Stewed Tomatoes

This dish is traditionally served with black eyed peas on New Year's Day in Virginia.

Serves 4-6



Melt the butter in a skillet. Add the onions, celery and pepper and cook until just soft.

Add the tomatoes, sugar, bread and seasonings. Mix thoroughly.

Lightly oil a medium casserole dish.  Pour in the tomato mixture and bake at 350 for 20-30 minutes or until it begins to bubble.

Cool slightly before serving.
